The Pavía, or yellow-fleshed peach, is particularly known for its exceptional flavor and juicy, sweet pulp, arguably surpassing most other sweet stone fruits. It’s worth noting that this fruit hasn’t achieved widespread commercial success due to its delicate skin and somewhat soft flesh. Today, however, we can enjoy a range of Pavía peaches with a very attractive orange color, excellent firmness, and a thin, resistant skin.
